Radish & Mint Raita

Serves: 4 people


Takes: Up to 15 mins

Radish taste wonderfully fresh and are a lovely addition to this raita.


Ingredients

½ teaspoon cumin seeds
250g thick plain yoghurt
2 radish, roughly chopped
½ cucumber, seeds removed and finely chopped
1 tablespoon fresh chopped mint, and extra to garnish
Pinch of sugar
salt, to taste

Method

  1. Toast the cumin seeds in a frying pan on low heat, moving them around to prevent them from burning. After a few minutes they will become golden brown. Remove from the heat, allow to cool and crush coarsely using a pestle and mortar.

  2. Mix all the ingredients together in a bowl, including the toasted cumin seeds and stir. Check the seasoning and add salt to taste. Garnish with fresh mint and serve chilled.
