Oaty Coconutty Granola Bars
Ingredients
60g unsalted butter
75g honey
50g golden syrup
125g brown sugar (I like demerara sugar)
1 orange, juice and zest
1 teaspoon vanilla extract
200g oats
75g desiccated coconut
25g coconut flakes, or use desiccated
150g mixed nuts and seeds, roughly chopped
50g sultanas
Method
Preheat the oven to 135°C/265°F/gas 2 and line a 20cm x 20cm x 5cm brownie pan with parchment paper.
Put the butter, honey, golden syrup, brown sugar and orange juice in a pan and bring to the boil before removing from the heat.
In a bowl mix together the remaining ingredients.
Carefully pour in the hot sugar syrup.
Mix together before spreading into the brownie pan.
Grease a pallete knife and flatten the top of the mixture.
Bake for 40 - 45 mins until golden brown.
Let cool until just warm, around 15 mins, before tipping out onto a board.
Remove the parchment and cut into equal sized squares.
Allow to cool completely before storing in an airtight container for upto 2 weeks.
