Nutty Chocolate Brownies

Serves: Makes 12


Takes: 30 mins to 1 hour

These brownies are so rich and delicious, they'll disappear before you know it. Served warm with a little sprinkling of extra cocoa powder and topped with a good dollop of crème fraiche is the perfect way to eat them!


Ingredients

150g unsalted butter, plus a little extra for greasing
75g muscovado sugar
75g caster sugar
2 eggs and 1 egg yolk, beaten
175g dark chocolate chips, melted
75g nuts, I like macadamia (optional), roughly crushed
25g white or dark chocolate chips
zest of 1 orange (optional)
40g plain flour
1/2 teaspoon baking powder
pinch of sea salt
40g cocoa powder

Method

  1. Firstly preheat the oven to 180°C/350°F/gas 4. Grease and line a small square brownie tin (around 15cm by 15 cm) with parchment paper.

  2. In a bowl mix together the butter and sugars until fluffy.

  3. Slowly beat in the eggs, a little at a time, making sure it is well incorporated after each addition.

  4. Fold in the melted chocolate and stir in the nuts (if using), chocolate chips and orange zest (if using).

  5. Sift over the flour, baking powder, salt and cocoa powder and mix well.

  6. Pour into the lined brownie tin and smooth over before baking in the oven for 20 – 30 minutes. You can test to see if it is cooked by inserting a skewer into the centre. It should come out with a little mixture stuck on. This means it will be a little gooey which is perfect.

  7. Leave to cool in the tin for 45 minutes before carefully removing it and slicing..

My Tip: If they are too crumbly when you cut them just pop them in the fridge to firm up first.
