Hot Smoky Nuts

Makes: 400g
Takes: 15 mins to 30 mins

I love the flavour combo in this recipe – sweet, sour, salty, hot and smoky. I’ve kept my spice mix pretty basic but you can really mix it up and add in whatever you fancy from your spice pantry.

If you don't want to add any egg whites to the recipes then just squeeze over some runny honey and cook it for less time. This will help the spices stick to the nuts.


Ingredients

2 teaspoons sea salt, to taste
1 lime, zest and juice
2 heaped tablespoons brown sugar
heaped ½ teaspoon chilli powder
2 teaspoons smoked paprika
1 egg white
400g nuts, cashews are my favourite but try mixing pecans, almonds and hazelnuts

Method

  1. Preheat the oven to 180°C/350°F/gas 4 and line a large baking sheet with parchment paper.

  2. In a pestle & mortar grind together the salt and the lime zest before stirring in the sugar, chilli powder and smoked paprika.

  3. Stir through the egg white until it forms a paste.

  4. Mix the paste with the nuts and spread evenly in one layer on the baking sheet.

  5. Roast in the oven until golden for about 20 minutes. A few mins before they are ready quickly squeeze over the lime juice and then return to the oven for the last few mins of cooking time.

  6. Allow to cool on the tray before storing in an air tight container for upto a week – if they last that long!
