Granola
Ingredients
300g large rolled oats
75g almonds, roughly chopped, or any nuts work well here
3 tablespoons nut butter
2 tablespoons coconut oil
1 tablespoon cinnamon powder
little pinch of sea salt (optional)
50g mixed seeds, I like pumpkin, sunflower and flax
50g dried cranberries
Method
Preheat the oven to 150°C/300°F.
Place the oats, almonds, nut butter, coconut oil, cinnamon powder and a pinch of salt (if using) in a large bowl.
Mix together and tip into a roasting tray.
Bake in the oven for 15 minutes.
Remove from the oven and stir in the mixed seeds. Return to the oven and bake for a further 15 minutes.
The granola is now baked. Stir in the cranberries and allow to cool completely.
Store in an airtight container for upto 2 weeks.
