Granola

Makes : around 500g

I’m always surprised at how many people don’t make their own granola. It’s so simple and you can add anything you like for flavour and crunch. I’ve made a healthy version by switching out sugar and using nut butter instead to make those lovely clusters. It’s always my favourite bit!

 


Ingredients

300g large rolled oats
75g almonds, roughly chopped, or any nuts work well here
3 tablespoons nut butter
2 tablespoons coconut oil
1 tablespoon cinnamon powder
little pinch of sea salt (optional)
50g mixed seeds, I like pumpkin, sunflower and flax
50g dried cranberries

Method

  1. Preheat the oven to 150°C/300°F.

  2. Place the oats, almonds, nut butter, coconut oil, cinnamon powder and a pinch of salt (if using) in a large bowl.

  3. Mix together and tip into a roasting tray.

  4. Bake in the oven for 15 minutes.

  5. Remove from the oven and stir in the mixed seeds. Return to the oven and bake for a further 15 minutes.

  6. The granola is now baked. Stir in the cranberries and allow to cool completely.

  7. Store in an airtight container for upto 2 weeks.
