Finger Lickin’ Chicken

Serves: 2 - 4 people

Ingredients

6 chicken thighs, skin and bone removed, cut into bite size pieces
1 tablespoon thick Greek yoghurt
1 teaspoon turmeric powder
1/2 teaspoon chilli powder
1 teaspoon smoked paprika
1/4 teaspoon coarse black pepper
1 teaspoon dried herbs, or finely chopped fresh herbs
1 teaspoon garlic puree
1 teaspoon honey
salt, to taste

Method

  1. In a bowl mix together the chicken thighs, yoghurt, turmeric powder, chilli powder, smoked paprika, black pepper, herbs, garlic puree and honey.

  2. Cover and leave to marinade in the fridge for a few hours if you have time (overnight would be ideal).

  3. Bring the chicken back to room temperature before seasoning well with salt and grilling either on a scorching griddle pan, or under a preheated grill, only turning when its golden brown.

  4. Check the chicken is cooked through before serving with a simple Raita and green leaves.
