Aromatic Spice Rub

If you want to give your meat some extra flavour then the best way is to rub some herbs and spices onto it before roasting. This spice rub is a mix of wonderful aromatic spices that can either be rubbed on as they are or mixed with oil. They make great edible gifts too. Just pop them in a little spice jar with a label on.


Ingredients

2 tablespoons coriander seeds
3 tablespoons cumin seeds
1 teaspoon fennel seeds
2 teaspoons black peppercorns
4 dried red chillies
4 tablespoons brown sugar
3 tablespoons sea salt
1 tablespoon smoked paprika
1/2 teaspoon cinnamon powder

Method

  1. Toast the coriander seeds, cumin seeds, fennel seeds and black peppercorns in a frying pan on a medium heat. Move them around often or they will burn.

  2. In a pestle and mortar bash the dried red chillies until they are all broken and the seeds have been released.

  3. Once the toasted seeds have started to change golden brown and you can smell the aroma, tip into the pestle and mortar and bash until coarse.

  4. Stir in the sugar, salt, smoked paprika and cinnamon powder.

  5. Use within 3 months, stored in an airtight jar away from sunlight. Rub on meat, or mix with oil to make a beautiful marinade.
