This is an ancient recipe of stuffing a whole fish with spices, sealing it in an earthenware pot, burying it in the ground and covering it with natural heat fermenters. This recipe couldn’t be simpler. The delicate flavour of salmon gets a baste with sweet fennel, zesty orange and fiery ginger. Throw in a little soy and some earthy thyme and you’ve got yourself one delicious meal.

Have you ever tried to cure your own salmon? It’s very easy and you can really play around with flavours. I love the crunch of lightly crushed coriander seeds, which work fantastically well in this recipe.
