Beets can taste strong when eaten raw, but they mellow and are rather sweet once roasted. Add some mustard, mixed leaves and maple roasted pecans and your boring salad days are over.

Hailed as a super crop it was discovered by the Incas and there are rumoured to be some 1800 varieties.

Asparagus is the first sign that Summer is just around the corner. You can use a veggie peeler to get thin ribbons to add to a salad, but I love to throw some flavours on there and then cook it on a griddle pan to get those char marks.
