Everyone needs a good tried and tested rich fruit cake recipe up their sleeve. Whether you ‘feed’ it with brandy, marsala or alcohol of your choice is upto you, but make sure you make it a few weeks before you plan on eating it. It tastes much better if you let the cake mature, and if you are going to ice it then leave it to dry out around 1 week before so the icing sticks!

Having a slice of cake with a coffee is a real treat and almost a must in my home. This coffee and pecan cake covers both bases, and you can add a splash of Marsala or Tia Maria if you fancy making it boozy.

I’m sure you won’t believe me but these little treats are actually low in fat! They are made using rapeseed oil so they stay moist, and I’ve used half wholemeal flour and half self raising flour to make the cake batter.

I crave sweet stuff all the time, and these hit the spot perfectly. Slightly bigger than a muffin and just enough sweetness to cure those sugar needs.
