Recipes
Masala Chai
Chai is world renowned for being sweet and spicy. The masala is usually kept secret and is passed down from mother to daughter. Here is one of my favourite recipes for creating your very own homemade chai — ssshhh don’t tell my mum I shared it with you!
Ginger Soy Steamed Salmon
I love Chinese flavours, and came up with this recipe when I was a student at uni.
Spiced Sea Bass with Chunky Cumin Pea Puree
A winning combo of pea puree with bass. This is one of my favourite recipes to make mid week as it’s quick and easy to scale up if you need to cook for more than 2!
Roast Sardines for Supper
Sardines are a great oily fish that taste wonderful on their own or roast with fresh ingredients and spices. This is one of my favourite quick recipes, perfect for during the week, or even when I have friends popping over for supper.
Thai Chilli Ginger Mussels
Mussels are cheap and available almost everywhere. They taste wonderful with a whole host of flavours but I love them with fiery ingredients like chilli and ginger.
Aromatic Spice Rub
If you want to give your meat some extra flavour then the best way is to rub some herbs and spices onto it before roasting. This spice rub is a mix of wonderful aromatic spices that can either be rubbed on as they are or mixed with oil.
King Prawn & Coconut Fry
When I thought of this recipe I wanted to borrow flavours from the south of India but then add some of the ingredients I love. So here it is…not exactly as you would have it on the shores of India but not that far off.
You can serve this a starter and it will serve 6 – 8 people depending how hungry you are, or as a main course for 4 people.
Cinnamon Summer Berries with Lemon Cardamom Cream
Summer berries are bursting with fresh flavours and they taste amazing with any sweet spices, especially cinnamon and cardamom.
Coriander Sesame Crusted Tuna
This recipe has a sort of Japanese feel with a touch of spice. Encrusting the tuna steak with spiced sesame is a wonderful way to add texture and flavour, and I like serving it with some cooling cucumber with a mustard soy dressing.
