Aromatic Spice Rub

If you want to give your meat some extra flavour then the best way is to rub some herbs and spices onto it before roasting. This spice rub is a mix of wonderful aromatic spices that can either be rubbed on as they are or mixed with oil.

King Prawn & Coconut Fry

When I thought of this recipe I wanted to borrow flavours from the south of India but then add some of the ingredients I love. So here it is…not exactly as you would have it on the shores of India but not that far off.

You can serve this a starter and it will serve 6 – 8 people depending how hungry you are, or as a main course for 4 people.

Coriander Sesame Crusted Tuna

This recipe has a sort of Japanese feel with a touch of spice. Encrusting the tuna steak with spiced sesame is a wonderful way to add texture and flavour, and I like serving it with some cooling cucumber with a mustard soy dressing.
