Flavour Diaries opens next week!

These past few months have been the craziest of my life. I’m so happy to share that my latest project is about to launch and I simply can’t wait! Flavour Diaries has been in the making for months and finally my International Cookery School is opening soon.

The leafy suburb of Bandra will be home to Mumbai’s first spacious fully hands on culinary studio for International cuisine and it’s just beautiful, if I say so myself. I’ve always dreamed of building my own cookery school ever since my Jamie Oliver Recipease days, and I can’t believe it’s almost ready. It’s having its last lick of paint before the doors open next Saturday 14th November. Too exciting!

When I started this project I had no idea how tough it was going to be, and I often wonder whether I would have faced as many challenges had I chosen London instead of Mumbai. As much as it has been a rollercoaster of emotions and more road blocks than I ever imagined, I have enjoyed building a business that India has never seen before. There’s something satisfying knowing you can share your love of food with people who also love food, and Mumbai is a city of food lovers.

I’ll be teaching classes in all the cuisines I love – Italian, Asian, European, Mexican, Middle Eastern – and also some skills based classes like baking. Of course my baking has to have a British slant and I’m teaching recipes that I have loved growing up and miss dearly now I am away from home. I’m also doing yummy high tea with the usual homemade scones and jam.

All the classes are designed to put the complete beginner at ease, as well as keep the experienced cook entertained, and each and every student gets their very own station to spread out and cook. After the cooking is over, it’s time to enjoy the fruits of your labour in the lovely sun lit dining area filled with cookbooks and food magazines I’ve collected from around the world. Bringing people together over food gives me enormous pleasure and seeing smiles and hearing laughter over a table of delicious dishes was at the heart of what I wanted to create when I moved to Mumbai. So let’s get together, create some great tasting dishes, and have lots of fun along the way.
