Sweet Potato Wedges
Serves: 4 people
Difficulty: Easy
These wedges are a great recipe to make when you fancy spicing up your potatoes. Perfect to make for the kids and taste wonderful cooked in foil on the BBQ. You can really mix up the spice flavours so use your faves and serve with a herby dip made with yoghurt.
Ingredients
- 1 kg sweet potatoes, scrubbed clean
- 2 tablespoons olive oil
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cumin powder
- good pinch cinnamon powder
- good pinch black pepper
- good pinch sea salt
Methods
1. Preheat the oven to 180°C/350°F/gas 4.
2. Leaving the skins on cut the sweet potatoes into wedges.
3. In a bowl mix together the olive oil and spices and rub all over the sweet potatoes.
4. Spread out evenly on a baking tray and sprinkle generously with sea salt.
5. Drizzle with a little extra olive oil and roast in the oven for 25 - 35 minutes.
6. Check they are cooked through, soft and that the skins are crispy and golden.
7. Serve piping hot with a cooling yoghurt dip.
Anjali's Tip : I like to sprinkle them with chilli flakes just before roasting for some extra warmth.
